Description
Delicate cocoa notes with mild spice and floral notes of spices and light wood. Low bitterness and astringency creating a delicate flavour profile.
Organic, high-quality cacao from the Ukajali region is one of the many regions in Peru where aromatic cacao varieties are grown. Arawak is a joint project between Casa Franceschi and VillaAndina for the development of sustainable and organic cultivation of aromatic cocoa varieties. Several hundred farmers in the Ukajali River region grow the local comun variety and several other varieties of the Trinitario species ((ICS-1, ICS-39, ICS-95, TSH-565)).
Peru is one of the world’s leading producers of organic cacao and many of the cacao farms around the Ucayali River have organic farming practices. This means that the cacao beans are grown without the use of pesticides or artificial fertilisers, which contributes to the natural taste and purity of the product.
