Dark chocolates – darkmilk chocolates are mainly characterised by an increased cocoa content (from 50% upwards). The lack of emulsifier is supplemented by an additional amount of cocoa butter. A high cocoa content and a relatively low amount of sugar (30% or less) distinguish artisanal milk chocolates from store-bought chocolates in which the cocoa content is below 30% and the main ingredient is sugar.
